Quinoa Salad Ingredients

. 1 cup of quinoa . 2 cups of water . 1 cup cherry tomatoes cut in half . 1/2 cucumber cut into cubes . 1 avocado cut into cubes . 1/4 cup fresh cilantro, chopped . 1lemon juice . 2 tablespoons olive oil . Salt and pepper to taste

Quinoa Salad Preparation mode

Rinse the quinoa well under running water. In a saucepan, boil 2 cups of water. Add the quinoa, reduce the heat, cover and cook for about 15 minutes, or until the water is absorbed and the quinoa is cooked. Let it cool.In a large bowl, mix the cooked quinoa, cherry tomatoes, cucumber, avocado and coriander.In a small bowl, mix the lemon juice, olive oil, salt and pepper. Pour over the salad and mix well.Adjust the seasonings as needed. Serve cold and enjoy your nutritious and delicious quinoa salad.
