1 large chicken breast (13oz – 370g) 2 spring onions (green onion) 1 handful holy basil or Thai basil 3 garlic cloves 2 birds eye or Thai chilli 2 tbsp coconut oil (or vegetable) For the sauce 2 tbsp oyster sauce 1 tbsp light soy sauce 1 tbsp dark soy sauce (optional) ½ tsp brown sugar 3 tbsp water
Ingredients
Serves 2 people
Get your vegetables ready, finely chop the garlic and chili (or pound in a mortar and pestle) , cut the spring onions, green part in lengths of approx. 1.5 inch on an angle, and the white part into julienne. Pluck the basil leaves ready for use. Set aside
Step One
Toss in the spring onions, cook another 20 seconds then add the basil leaves. Remove from heat, stir until just wilted, serve immediately with ideally, jasmine rice.

In a small mixing bowl, place all the sauce ingredients and mix well. Set aside.For the chicken, remove skin if any, then cut into bite size pieces. Set aside. Feel free to substitute with another type of protein!
Step Two
Place a wok or frying pan over high heat. Add the oil and fry the chicken until golden brown. Push chicken to the side, then add the minced garlic and chopped chilli and cook for a few seconds. Mix well with the chicken. Add the sauce mixture and leave to reduce until you reach a glossy consistency.
