Virgin Olive Oil: it has not undergone any chemical process and is a high quality olive juice, but not as high as extra virgin olive oil. Its acidity must be less than 2% and it may have a small sensory defect.

Olive pomace oil: This is a blend of refined olive oil and virgin olive oils. Its acidity may not exceed 1%.

Olive oil: this is the mixture of refined and virgin oils. Its degree of acidity must not be higher than 1%.

Extra Virgin Olive Oil: Olive juice of the highest quality. Its acidity must be less than 0.8% and its organoleptic characteristics must be impeccable.
