The pudding was created in the 14 century, they tradittionally hide a silver coin inside it. It brough good fortune to the person that was lucky to find it.

Ingredients

·450 grams of mixed dried fruit.·25 grams mixed candied fruit peel, finally chopped.·1 small cooking apple, peeled, cored and finally choped.·1 tablespoon orange zest.·1/2 tablespoon lemon zest.·2 tablespoon fresh orange juice.1 tablespoon fresh lemon juice.1 teaspoon ground mixed spice.·55 g ( 1/2 cup) self-rising flour, sifted.· 1/2 teaspoon ground cinamoon.·110 grams (1 cup) fresh breadcrumbs.·25 grams ( 1/4 cup) whole almonds, coarsely chooped.·2 large eggs.

·16 bowl.· cooking towel·Spoon and forks.·Baking paper.·Steamer.·Saucepan.·Greasproof paper.·String.·Aluminium foil.

Gather the ingredients.

Place the dried fracit,candied peel,apple and orange and lemon zest and jusies into a large mixing bowl and stir well,cover the bowl with a towel and leavet for a couple hours.

Lightly butter a 2 1/2 pint pudding basin.

Step 4

In a large mixing bowl, stir the flour, fixed spice and, cinnamon together. Add the suet, sugar breadcrumbs, almonds, and stir again until all the ingredients are well mixed.Add the marined dried fruits and stir again.

Step 5

In a bowl, beat the eggs ligthly, then stir quickly into the dryingredients.The mixture should have a fairly soft consistency.

Spoon the mixture into the greased pudding basin gently preing the mixture down with the back of the spooon. Cover with a double layer of greaseproof, then a layer of aluminium foil tie securely with a sttring around the basin, then loop over the top and then around the bowl again.

Seat a stamer over a saucepan of simmering water, place the pudding in the steamer for 7 hours.The pudding shoud be a dark brown color when it's cooke.

Remove the pudding from the steamer and cook completly. Remove the paper, prick the pudding with a skeewer in a few pleces.

Cover with fresh greaseproof paper and retie with a string.

Store fore at least from 4 to 5 weeks in a cool, dry place until christmas day. Reheat the pudding by steaminng again for about an hour.
