These cookies are typical in Christmas. This recipe comes from medieval Europe. Children put this cookies on a plate, in a table, on Christmas night with the illusion that Santa Claus will eat them.

-450g of Flour-200g of Butter-100g of Brown Sugar-1 Egg M.-80g of Honey-2 tsps. of Cinnamon-1 tsps. of Ginger Powder

-Baking paper-Cling Film-Roller-Cutter in any shape that you like-Bowl-Oven

1. Before starting with the recepie, we recoment you to sift the flour, ginger and cinnamon. That will prevent creating lumps in the dough.2. Beat the butter with the brown sugar, remember that the butter must be soft.3. Add the egg and continue mixing until the dough is homogenous.4. Add the honey and mix.5. Add the dry ingredients and mix slowly until you can not see those. Remember not to work the dough excessivley.6. Divide the resuling doughb into two portions , flatten than slightly and wrap then in a plastic wrap. Let them rest in the fridge for about 15 minutes.7. Strech the dough, once streched, let the dough rest for 1 hour in the fridge. If you're in a hurry you can leavit in the freezer for 20 mintues.

8. After resting, cut the dough in the shape you want.9. Bake the cookies at 108ºC for about 15 minutes, until the edges begin to darken .Each cooking time depends on the cookie. Be careful not over bake them. You can decorate them with Royal Icing, chocolate or whatever you want.
