how do we cook Kesra

  1. Put the semolina, oil, yeast and salt in a large bowl.
  2. Add the warm water little by little, bringing the semolina together to form a fairly firm ball of dough.
  3. Cover and leave for 10 to 15 minutes.
  4. Knead by hand with palm facing forward or in a food processor on speed 2 for 5 minutes. The dough should be smooth.
  5. Form small balls, not too small or too big.
  6. Cover and leave to rest for 20 minutes.
  7. Using a rolling pin, form a disk not too thick.
  8. Bake in an earthenware tajine or, failing that, a non-stick pan.
  9. Brown on one side. Then turn over and prick with a fork.
  10. Once both sides are golden brown, set aside and repeat the operation.

The different stages

  1. put in a pot base of olive oil, the chopped onion,the liver cut into small pieces, the spices (except cumin),salt and pepper. Add on top of the concentrated tomato
  2. put on a bright flame, and stir without adding water for a good 5 minutes stirring very often.
  3. Add 1/2 l of hot water, and cook covered for 20 minutes. After 10 minutes,put the crushed garlic in the sauce.Add the cumin 5 minutes before the end.
  4. At the end of cooking, the sauce should be very thick. Serve hot decorated with parsley and a fried chili pepper

  • 3 whole eggs
  • 0.50 ib of semoulina
  • 0.22ib of sugar
  • 0.17ip of oil
  • 0.26ip of milk
  • 0.03ib baking powder
  • zest of 2 lemons
  • 0.03ib vanilla sugar

ingredients:

  • 0.44 ib of sugar
  • 0.52 pt water
  • 0.03 ib vanilla sugar
  • or 4 teaspoons of orange flower water

  1. mix the ingredients until you have a not too liquid dough.
  2. place the mixture in an oiled mould and bake for 20-30 minutes in a preheated oven at 180°.
  3. During the cooking time, cook the syrup in a saucepan for 10 minutes on a low heat
  4. When the cake is out of the oven, pour the syrup over it and leave to cool before removing from the mould
  5. Cut according to your taste and adapt your decoration according to your filling and serve chilled with a good mint tea

Recipe for syrup

. 3 soup spoon of honey

. 1/2 lemon juice
. 1,102 lb of sugar
. orange peels
. 1 pinte water

  1. prepare the syrup by pourring the sugar, lemon and orange peels and water into a saucepan and heat, over low heat, for a few minutes, while stirring well. when the liquid starts to bubble, add the honey and mix well. continue cooking for 5 minutes until the syrup thickens. Book.

how do we cook Yoyo

  1. In a bowl, pour sugar, oil, vanilla sugar, orange blossom water, yeast and eggs and mix with mixer until the Tunisian yoyo dough is homogeneous.
  2. pour the flour little by little and whisk the dough vigorously at the same time so that the mixture is done well.
  3. flour your worktop and place the dough on it. spread it with a rolling pin until you form a cake.
  4. cut the yoyo dough into circles using a cookie cutter or glass and make a small hole in the middle of each dough circle to form the donuts.
  5. then heat the oil in the fryer or pan and fry the yoyos until they swell and are well browned drain them and cover them with syrop and then prepare.
