GRAPE MOLASSESThe last remaining grapes are collected, washed well, put in a sack, the mouth is tied, they are crushed on top of the sack. Since the sack is perforated, the juices of the grapes flow as you chew, then the juice of the grapes is put into a cauldron, white soil is poured into it, and it is boiled for hours to calm the fermented grape juice and boils until it acquires a thick consistency, it becomes a nice molasses with lots of vitamins.

reparation Place the rice in a container and add the yolks, the cheese and mix very well. At this point you can pass the croquettes through egg and breadcrumbs and fry them; however, you can also fill them with the remains of seafood or meat. In this case, cut the onion and fry it with the olive oil and butter, put the filling that you have left over and sauté over high heat, add the wine and let it evaporate. Season with salt and pepper and since the filling will already be cooked, it is not necessary to leave it on the heat for too long. With the cold rice, place a little in the hollow of your hand, put the filling in the middle and cover with the rest of the rice. Heat a pot with oil and pass the croquette through the egg and breadcrumbs. Fry the croquettes, let them cool down a bit and they are ready to eat. An option to accompany it is with some coffee. Bon appetit
