This computer virus is starting to cause problems. All the delicious Christmas candy recipes seem to have disappeared from the internet. Luckily, there are still a lot of people who remember the old way to cook traditional dishes. What is the name of these fondant chocolates wrapped in shiny papers that trim the Hungarian Christmas trees?

The earliest version of this fondant dessert emerged during the 14th century in France and was called fondantcukor. The recipe was altered through the years of European confectionery history. French pastry chef Pierre-Andre Manion in the 17th century introduced fondantcukor recipe in Germany. The popularity of the fondant candies reached the shores of Hungary when German craftsmen migrated there in the 19th century. German wealthy families would erect Christmas trees in the entrance halls of their homes (called salons) and decorate them with sweets wrapped in shiny paper. In 1891, Hungarian-French chef and entrepreneur Hegyesi Joseph coined the name szaloncukor which is derived from German fondant candy called "Salonzuckerl" which means "Sugar in Salons". The mass production of fondant candies wrapped in foil packaging was manufactured by steam-powered engines in 1883 in Hungary, mostly dedicated to creating traditional cakes of the Gerbeaud brand. Following Gerbeaud as inspiration, the family of Geza Kugler founded a chocolate factory in 1886. The Gerbeauds and Kuglers each adopted their own version of the recipe and published 19th-century recipe books of Hungarian confectionery. By the end of the 1800s, the candies were packed in tinfoil balls and colored tissue papers.

The story of Christmas candy began with a rather disgraceful theft of ideas. The case relates to a confectionery in Lyon run by a master named Papillot (pronounced: papijjo) in the second half of the 1700s. His valet fell in love with a girl who worked on the floor above the plant. And since the butler didn’t have much money for a more ornate gift, he figured out that he wrapped a small piece of chocolate in a thin piece of paper every day and smuggled it out as a gift to the girl. But somehow he didn’t feel it was a real, prestigious gift. To toss it up somewhat though, he wrote kind words, sometimes poetic quotes, on paper. However, he didn't want anyone else to see them, so he put another layer of paper on the whole pack in as beautiful a color as possible, which is why the packet has now really become worthy of the name “gift”. Unfortunately, after a while, Papillot noticed that by the end of the day, there was always a little less chocolate than they had produced, and he began an investigation. Of course, he soon realized who the threads were leading to. In fact, he got the “culprit” on it as well, just working with great care on the glossy wrapped gift. But instead of rewarding him with an idea award and then entrusting him with the management of a separate small gift chocolate production department, he fired the butler and he himself started to utilize an idea. From then on, part of the plant switched to producing double-packed, fancy-looking chocolates. On the inner paper, carefully selected texts were written, which could now be not only love messages, but even jokes, riddles, more familiar poems or puns, so it was always a spiritual excitement to buy such a package. It was already the master's idea to cut the outer cover on its two edges to make the effect a little rococo light, in line with contemporary fashion. Papillot's confectionery ran up nicely from all this, and the form it produced was so successful that when a hundred years later, in 1898, the first, larger company was formed, which already produced the package with more serious machines, it was called papillot after the original manufacturer. the product that still has that name. (There is no news about the fate of the butler, but hopefully his life turned out lucky as well.)

Just a week after Saint Nicholas’ Day comes Saint Lucia’s Day. In Croatia, Saint Lucia is another well-celebrated saint amongst family and children before Christmas. Rather than Christmas day itself, the 13th of December was traditionally when children received gifts, delivered by St Lucia (though today many children get presents on St Lucia’s Day, St Nicholas’s Day and 25 December!). On this day or the night before, people traditionally sow the Christmas Wheat. The Christmas Wheat is planted on a special plate, platter or bowl which should grow in time before Christmas. On Christmas Day, the grown wheat is then tied with a ribbon and used as a decorative piece on the dining table with candles sticking out from the middle. This ancient tradition dates back to times when agriculture was the country’s main industry and is meant to invoke a good harvest. If the wheat grows dense, tall, and lush, it is believed that this is a sign that the next year will be fruitful and successful. In some parts of Croatia, people observe the wheat each day until Christmas. It is believed that the weather of each month in the upcoming year will mirror the weather on each of the days in the period from St Lucia to Christmas. The wheat serves as a symbol of fertility, new life, and its renewal.
