Introduction
Food, substance consisting essentially of protein, carbohydrate, fat, and other nutrients used in the body of an organism to sustain growth and vital processes and to furnish energy. Plants, which convert solar energy to food by photosynthesis, are the primary food source.
Hunting and gathering, horticulture, pastoralism, and the development of agriculture are the primary means by which humans have adapted to their environments to feed themselves. This was especially the case during the early phases of European trade and colonial expansion, when foods such as the hot red pepper, corn’, and sweet potatoes spread throughout Europe to Africa and Asia.
This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural system is one of the major contributors to climate change, accountable for as much as 37% of total greenhouse gas emissions. Addressing the carbon intensity of the food system and food waste are important mitigation measures in the global response to climate change.
The food system has significant impacts on a wide range of other social and political issues including: sustainability, biological diversity, economics, population growth, water supply, and access to food.
The right to food is a human right derived from the International Covenant on Economic, Social and Cultural Rights , recognizing the «right to an adequate standard of living, including adequate food», as well as the «fundamental right to be free from hunger».
