Our cookbook

We are a Spanish, French and German group of 11 to 14 year old pupils working together on sustainability as a part of a Erasmus+- project from 2021 to 2022. In the time of Corona lockdown we worked on this cookbook and collected our favorite sustainable recipes.

"Arme Ritter" - Ingredients

- 300 ml of milk- 2 eggs- 50 g of sugar- a little bit of salt - 6 slices of white two days old bread - 50 g of clarified butter - 5 tbsp of coking oil

1st Step

Beat together the eggs, the milk, the salt and the sugar

3rd step

Dunk each slice of bread in egg mixture, soaking both sides. Place in pan, and cook on both sides until golden. Serve hot.

Pancakes- Ingredients

50g butter 250g of flour 80g of sugar 2 teaspoons of baking soda 0.5 teaspoon of salt 300ml of milk (please use regional milk) 1 egg (please use regional eggs) 2 tablespoons of oil

- Pre-heat the pan- Add oil to pan - Flip the pancakes when the bubbles burst.

mix all ingrédients.

"Kaiserschmarrn"- Ingredients

- 200 milliliter of milk (please use regional and best organic milk) - 120 grams of flour - 1 team spoon of sugar - 3 tablespoons of raisins (as desired) (please use regional raisins) - 3 eggs (please use regional and best organic eggs) - 2 tablespoons of clarified butter - 1 ponch of salt

First steps

Step 3:Add the eggs yolks tot he mixing bowl and whisk or beat with a hand mixer until smooth

STEP 1: Add milk, flour, sugar and raisins to a mixing bowl. STEP 2: Separate the eggs.

4th step

Put the egg whites in a large mixing bowl and beat stiffly with the whirls oft the hand stirrer. The egg white is ready if you can turn the bowl upside down without anything flowing out.

Put the egg snow on the dough and gently add the whisk.

Put a tablespoon of clarified butter in a frying pan on a medium heat.

When the fat is hot enough, put in the butter and fry for 2 to 3 minutes until the underside is golden brown. Caution: if you fry the Kaiserschmarrn longer, it will burn

Turn the Kaiserschmarrn with a fryin pan, fry it golden brown on the other side. Stir occasionally.

Use two forks to tear the Kaiserschmarrn into edible pieces.

Add the second tablespoon of clarified Butter and fry again for a few minutes.

Spaetzle - Ingredients

- 200 g of grated cheese - 500 g of flour from a local mill - 4 eggs from a local farmer - 2 onions from a local farmer - 2 tablespoons of butter

1st step

Mix the flour with the eggs, 1-2 teaspoons of salt and about 1/4 l of warm water in a bowl and stir until a smooth dough is formed that is not as firm as cake batter, not as thin as pancake batter, but somehow dripping from the spoon.

2nd step

Then fill the large saucepan with 3 liters of water, add 1 tablespoon of salt, put the lid on and bring to the boil. Peel the onions and cut into fine rings. Melt the butter in a small pan, fry the onions in it over medium heat until golden, keep warm. Preheat the oven to 200 ° (circulating air 180 degrees) and put in a fire-proof dish that can accommodate many spaetzle.

3rd step

Then pour in the next portion. Always take the spaetzle floating on top out of the water with the slotted spoon, drain well and immediately pour into the hot bowl in the oven.

The water should now boil: open the lid, place the spaetzle slicer, spaetzle press or simply a plastic sieve on the pot. Pour in a good portion of the dough and slice, press or scrape through the openings with a wooden spoon. Bring the submerged strips of dough to the boil briefly several times until they voluntarily come up again. This takes 3-5 minutes per load.

Last step

Pepper each layer and sprinkle with cheese. Crown the top layer with the onions and the hot butter - briefly heat up the oven (250/220) and bake the spaetzle for 5 minutes.

Vegetable soup with cucumber - Ingredients

Potatoe casserole - ingredients

- 3 potatoes - 200 ml of cream - 1 egg - bit of salt - a bit of pepper - a bit of nutmeg - 3 slices of cheese

peel the potatoes and cut into slices

mix the rest together

Put the potatoes into a gratin dish and bake for 25 minutes at 150°

Yummy!

Then spread the cheese on top and bake again for 15 minutes.Enjoy!

"Reibekuchen"-ingredients

- 12 organic potatoes - 4 organic onions - 2 tablespoons of flour - 3 organic eggs - Salt and pepper - organic oil

stir the potatoes again and again so that the potatoes don't turn too brown.

grate the potatoes, grate the onions and mix them with the potatoes

Stir in eggs and flour and season with salt and pepper.

Put small blobs into a pan and..

...roost the “Reibekuchen” with oil, be sure not to turn brown.

Mmmm- tasty !

You can eat it sweet or salty. If you prefer the Reibekuchen sweet , you can try ist it with applesauce. If you prefer your Reibekuchen salty, you can eat it with salmon, horseradish and cream cheese..

Spinach dumplings - ingredients

  • 500 g spinach
  • 2 shallot
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • some salt, pepper and sage
  • 250 g spelled flour
  • 2 eggs
  • 3 pretzel rolls
  • 1 pinch of nutmeg
  • 50 g parmesan
  • 2 tablespoons of breadcrumbs
  • 4 tablespoons of butter

step 1

Wash the spinach, pluck it into small pieces and let it collapse in a large saucepan over high heat.Then chop the cooked spinach into small pieces.Dice the shallots and garlic and roast them in a small pan with the olive oil until golden brown.Add the chopped spinach. Season with nutmeg, salt and pepper.

step 2

Mash with eggs, bread and parmesan

Dice the pretzel rolls and fold them in as well.Knead everything by hand.The mass should not stick too much and should be easy to shape - if necessary, add more rolls.

step 4

Shape the dough into dumplings with your hands - moisten your hands with water.Cook the dumplings in boiling salted water for about 10 minutes.

Grate the parmesan.Roast the breadcrumbs in the butter, season with salt and mix with the parmesan.Fish the dumplings out of the water and fry them in a pan with butter and fresh sage. Arrange the dumplings on a plate and sprinkle with the parmesan and breadcrumbs mixture.

Mashed potatoes with mushroom Sauce and salad - ingredients

  • For Mashed Potatoes:
  • 1kg potatoes 300ml milk 50g butter salt
  • For Mushroom Sauce:
  • 400g mushrooms 400ml double cream 1 onion
  • thyme
  • oil
  • For Salad:
  • 200g cucumbers 300g tomatoes 100g sour cream salt and pepper

1st step

Peel the potatoes.

Cut the mushrooms, the onion and the salad Ingredients

Cook the potatoes and mash them with butter and milk.

Mix the salad with the sour cream and the spices.
